We love this recipe because it turns a jar of our Specialty Basil Pesto into a vibrant, restaurant-quality dinner in minutes. It’s simple, fresh, and full of flavor — proof that great ingredients make all the difference.
Ingredients
-
12 oz spaghetti or linguine
-
½ to ¾ cup Specialty Fresh Basil Pesto
-
½ cup reserved pasta water
-
¼ cup freshly grated Parmesan (optional)
-
Fresh basil leaves for garnish (optional)
-
Freshly cracked black pepper
-
Optional: drizzle of Extra Virgin Olive Oil
Directions
Bring a large pot of salted water to a boil. Cook pasta until al dente according to package directions. Before draining, reserve ½ cup of pasta water.
Drain pasta and transfer to a large bowl.
Add ½ to ¾ cup Specialty Fresh Basil Pesto and toss to coat.
Add reserved pasta water 1–2 tablespoons at a time, tossing continuously, until the sauce becomes smooth and evenly coats the pasta.
Top with Parmesan, fresh basil, cracked black pepper, and a drizzle of Extra Virgin Olive Oil if desired.
Serve immediately and enjoy.
Recipe Note
Salt your pasta water well – It should taste like the sea. This is your first layer of flavor.
Reserve pasta water – The starchy water helps create a silky sauce that clings beautifully to the pasta.
Don’t rinse the pasta – You want the starch to help the pesto stick.
Toss while hot – Warm pasta helps the pesto loosen and coat evenly.
Start with less pesto – You can always add more, but you can’t take it out.
Add protein easily – Grilled chicken, shrimp, or white beans turn this into a complete meal.
Finish with a drizzle of EVOO – A small splash of premium Extra Virgin Olive Oil adds depth and fresh aroma.
Brighten it up – A squeeze of fresh lemon enhances the basil flavor without overpowering it.
