Bright & Herbaceous — Why Lemon Herb Vinaigrette Will Be Your Go-To Dressing
Share
There are dressings, and then there are dressings that wake up your taste buds. The Lemon Herb Vinaigrette from The Little Shop of Olive Oils is absolutely in the latter camp. Fresh, zesty, subtly sweet, and herbaceous — it gives ordinary greens or roasted vegetables a real glow. If you’ve been sticking with the same salad dressing routine, this could be the change you didn’t know you needed.
A Simple Ritual
Here’s a small ritual I love with this dressing: toss freshly washed greens with a little salt, let them sit for 5 minutes so they wilt slightly. Then drizzle this vinaigrette, toss, and finish with something crunchy — maybe toasted almonds or sunflower seeds. The touch of texture + this vibrant dressing = dinner magic.

We love this vinaigrette because it’s bright, herby, and just the right balance of tangy and smooth — the kind of dressing that makes even simple greens taste special.
Ingredients
-
¼ cup olive oil (Like Basil Olive Oil)
- Zest of 1 lemon
- Juice of 1 lemon
- 2 teaspoons Dijon mustard
- 2 garlic cloves, minced
- 1 teaspoon raw honey
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
Directions
- Wash and zest the lemon, then juice it.
- Mince the garlic cloves finely.
- In a small bowl or a jar with a tight lid, combine all ingredients: olive oil, lemon zest, lemon juice, Dijon mustard, garlic, honey, oregano, thyme, salt, and pepper.
- Shake the jar or whisk vigorously until the vinaigrette is well blended and slightly thickened.
