For the Tart

3–4 ripe peaches, thinly sliced

1 cup all-purpose flour

1/2 cup granulated sugar

1 teaspoon baking powder

1/4 teaspoon salt

2 large eggs

1/4 cup Herbes de Provence Olive Oil

2 tablespoons Peach Balsamic Vinegar

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

Directions
- Preheat oven to 350°F. Lightly grease a 9-inch tart pan or pie dish with olive oil.
- In a bowl, whisk together the flour, sugar, baking powder, and salt.
- In another bowl, whisk together the eggs, Herbes de Provence Olive Oil, Peach Balsamic, vanilla, and almond extract (if using).
Stir the wet ingredients into the dry ingredients until just combined. The batter will be thick.
Spread the batter evenly into the prepared pan.
- Arrange the peach slices on top in a circular pattern.
- Bake for 35–40 minutes, or until golden and a toothpick inserted in the center comes out clean.
