
Dark Chocolate Balsamic Lava Cake

Ingredients
- 4 oz dark chocolate, chopped
- ¼ cup of unsalted butter
- 1 tbsp Dark Chocolate Balsamic Vinegar
- 2 large eggs
- 2 large egg yolks
- ¼ cup granulated sugar
- 2 tbsp all-purpose flour
- Cocoa powder or powdered sugar (for dusting)
Instructions
- Preheat your oven to 425ºF (220ºC). Grease 4 small ramekins or muffin tins with butter and dust with cocoa powder.
- In a microwave-safe bowl, combine the dark chocolate and butter. Melt in 20-second intervals, stirring after each interval, until smooth. Let cool slightly, then stir in the Dark Chocolate Balsamic.
- In a separate bowl, whisk the eggs, egg yolks, and sugar until the mixture is pale and thick.
- Gradually fold the melted chocolate mixture into the egg mixture until well combined.
- Sift the flour into the batter and gently fold it in until no streaks remain.
- Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.
- Place the ramekins on a baking sheet and bake for 12-14 minutes, or until the edges are set but the centers are still slightly jiggly.
- Allow the cakes to cool for 1-2 minutes, then carefully run a knife around the edges to loosen. Invert the cakes onto serving plates.
- Dust with cocoa powder or powdered sugar and serve immediately. For an extra touch, pair with fresh berries or a dollop of whipped cream if desired.
