Ingredients
For the Plum Syrup

1 plum, thinly sliced into wedges

Directions
Make the Plum Syrup
In a small saucepan, combine the chopped plums, sugar, water, nutmeg, and cinnamon stick.
Bring the mixture to a boil, gently crushing the plums with a wooden spoon.
Reduce heat to medium-low and simmer for 3–4 minutes.
Remove from heat and let the mixture sit for 15 minutes.
Strain the syrup through a fine mesh sieve, pressing gently on the plums.
Discard the spices and reserve the syrup.
Refrigerate the syrup for up to 10 days.
(Optional) Save the softened plums to stir into yogurt or oatmeal.
Assemble the Cocktail
Fill 4 glasses with ice.
Pour 1 ounce plum syrup into each glass.
Add 1 ounce soda water and stir gently.
Top each glass with chilled Prosecco.
Garnish with plum wedges and a sprig of fresh rosemary.
