Coconut Pina Colada
Share
Sometimes you just need a drink that feels like vacation in a glass.
This Coconut Piña Colada has all the creamy, tropical flavor you expect — but with a little twist. The addition of Coconut White Balsamic Vinegar brings brightness and depth that balances the sweetness beautifully. It doesn’t taste like vinegar — it tastes layered, smooth, and just a little unexpected.
Blended with pineapple juice, cream of coconut, and light rum, it’s rich but refreshing. The balsamic keeps it from feeling overly sweet and gives it that subtle complexity that makes people say, “Wait… what’s in this?”
Garnish with a pineapple wedge and a twist of lime peel, and suddenly you’re not just serving a drink — you’re serving a moment.

Recipe Note
Tracey’s Notes
- Adjust the balsamic slightly if you prefer it brighter or more subtle.
- For a mocktail version, omit the rum and add a splash of sparkling water.
- Serve in chilled glasses for the best texture.
