
Sea Scallop Skewers

Ingredients:
- 12 large sea scallops (dry-packed, cleaned and patted dry)
- 2 tablespoons Lemon Olive Oil
- Zest of 1 lemon
- Juice of ½ lemon
- 1 small garlic clove, minced
- Salt and freshly cracked black pepper, to taste
- Bamboo or metal skewers
- Lemon slices and lettuce leaves, for garnish (optional)
Instructions:
- In a bowl, combine the Lemon Olive Oil, lemon zest, lemon juice, minced garlic, salt, and pepper. Add scallops and gently toss to coat. Let marinate for 10–15 minutes at room temperature.
- Thread 3–4 scallops onto each skewer. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
- Preheat a grill or grill pan over medium-high heat. Sear the skewers for about 2–3 minutes per side, until golden brown with a slight char and the centers are opaque.
- Arrange skewers on a plate over lettuce leaves, and garnish with lemon slices. Drizzle lightly with extra Lemon Olive Oil before serving if desired.
