Sea Scallop Skewers

Ingredients:

  • 12 large sea scallops (dry-packed, cleaned and patted dry)
  • 2 tablespoons Lemon Olive Oil
  • Zest of 1 lemon
  • Juice of ½ lemon
  • 1 small garlic clove, minced
  • Salt and freshly cracked black pepper, to taste
  • Bamboo or metal skewers
  • Lemon slices and lettuce leaves, for garnish (optional)

Instructions:

  • In a bowl, combine the Lemon Olive Oil, lemon zest, lemon juice, minced garlic, salt, and pepper. Add scallops and gently toss to coat. Let marinate for 1015 minutes at room temperature.
  • Thread 34 scallops onto each skewer. If using wooden skewers, soak them in water for 30 minutes beforehand to prevent burning.
  • Preheat a grill or grill pan over medium-high heat. Sear the skewers for about 23 minutes per side, until golden brown with a slight char and the centers are opaque.
  • Arrange skewers on a plate over lettuce leaves, and garnish with lemon slices. Drizzle lightly with extra Lemon Olive Oil before serving if desired.
