INGREDIENTS
Bruschetta:
- 1 baguette, sliced into ½-inch thick pieces
- 2 tablespoons Basil Premium Olive Oil
- 3 ripe peaches, pitted and diced
- ½ red bell pepper, diced
- 2 green onions, thinly sliced
- 1 tablespoon fresh basil, finely chopped
- 2 tablespoons Peach White Balsamic Vinegar
- Salt and pepper to taste
INSTRUCTIONS
- Preheat the grill or a grill pan to medium-high heat.
- Brush both sides of the baguette slices with Basil Olive Oil.
- Grill the baguette slices for 2-3 minutes on each side, or until they are golden and have grill marks. Remove from the grill and set aside.
- In a medium bowl, combine the diced peaches, red bell pepper, green onions, and fresh basil.
- Drizzle with Peach White Balsamic Vinegar and toss gently to combine.
- Season with salt and pepper to taste.
- Spoon the peach salsa generously onto each grilled baguette slice.
- Garnish with additional fresh basil leaves if desired.
- Arrange the bruschetta on a serving platter and serve immediately.
