Maple Glazed Bacon-Wrapped Jumbo Shrimp

Ingredients

  • 12 jumbo shrimp, peeled and deveined, tails left on
  • 6 slices thin-cut bacon, cut in half
  • 3 tbsp Vermont Maple Dark Balsamic
  • 1 tbsp Dijon mustard
  • 1 clove garlic, finely minced
  • ½ tsp smoked paprika
  • Freshly ground black pepper, to taste
  • 1 tbsp fresh parsley, finely chopped
  • Lime wedges, for serving, optional
  • 12 toothpicks

Directions

  1. Preheat oven to 400°F. Line a rimmed baking sheet with parchment paper or foil and place a wire rack on top, if available.

  2. Arrange the bacon on the baking sheet and bake for approximately 6–8 minutes, just until it begins to render but is still flexible. Remove and allow to cool slightly.

  3. Pat the shrimp dry with paper towels.

  4. In a small bowl, whisk together the Vermont Maple Dark Balsamic, Dijon mustard, minced garlic, smoked paprika, and black pepper.

  5. Wrap each shrimp with half a slice of partially cooked bacon and secure with a toothpick.

  6. Arrange the wrapped shrimp on the prepared baking sheet or wire rack.

  7. Brush generously with the maple balsamic glaze.

  8. Bake for 10–12 minutes, or until the shrimp are opaque and cooked through and the bacon is crisp.

  9. During the final 2–3 minutes, brush the shrimp with another light layer of Vermont Maple Dark Balsamic for an extra glossy, caramelized finish.

  10. Remove from the oven and sprinkle with fresh parsley.

  11. Serve warm with lime wedges, if desired.
