Grilled Zucchini-Wrapped Feta Skewers with Basil Olive Oil

Ingredients (Serves 4):

  • 2 medium zucchini, thinly sliced lengthwise with a mandolin or vegetable peeler
  • 1 block of feta cheese, cut into bite-sized cubes
  • 1-pint cherry tomatoes
  • 2 tbsp Basil Olive Oil, plus more for grilling
  • 1 tsp dried oregano
  • Salt & pepper, to taste
  • Wooden or metal skewers (if wooden, soak in water for 20 minutes)

Instructions:

  • Lightly brush zucchini ribbons with Basil Olive Oil and sprinkle with salt, pepper, and oregano. Wrap each zucchini slice around a cube of feta.
  • Alternate wrapped feta bundles and cherry tomatoes on skewers.
  • Preheat grill or grill pan to medium-high. Brush skewers with a little more Basil Olive Oil and grill for 23 minutes per side, or until grill marks appear and the tomatoes start to blister.
  • Transfer to a platter and drizzle with more Basil Olive Oil before serving. Garnish with fresh basil if desired.
