Wooden or metal skewers (if wooden, soak in water for 20 minutes)
Instructions:
Lightly brush zucchini ribbons with Basil Olive Oil and sprinkle with salt, pepper, and oregano. Wrap each zucchini slice around a cube of feta.
Alternate wrapped feta bundles and cherry tomatoes on skewers.
Preheat grill or grill pan to medium-high. Brush skewers with a little more Basil Olive Oil and grill for 2–3 minutes per side, or until grill marks appear and the tomatoes start to blister.
Transfer to a platter and drizzle with more Basil Olive Oil before serving. Garnish with fresh basil if desired.
