A fresh and simple bruschetta made with vine-ripened tomatoes, basil, garlic, and Tuscan Herb Premium Olive Oil on crispy toasted bread for a classic Italian-inspired appetizer.
Ingredients
- 1 French baguette, sliced
- 4 large ripe tomatoes, diced
- 2 garlic cloves, minced
- 1/4 cup red onion or shallot, finely chopped

1/4 cup Tuscan Olive Oil, plus more for drizzling
- 2 tbsp fresh basil, chopped (plus whole leaves for garnish)
- 1/4 tsp sea salt
- 1/4 tsp black pepper
- Optional: black olives, feta or parmesan for topping
Directions
Preheat oven to 400°F. Brush baguette slices with olive oil and toast until golden and crisp (about 5–7 minutes).
In a bowl, combine diced tomatoes, garlic, onion, chopped basil, salt, pepper, and olive oil. Let sit for 10 minutes to allow flavors to meld.
Spoon the tomato mixture generously over the toasted baguette slices. Garnish with olives, cheese, and basil leaves.
Add a final drizzle of Little Shop olive oil and serve immediately.
