1/4 cup Vermont Maple Dark Balsamic Vinegar

1/8 teaspoon red pepper flakes

2 teaspoons Dijon mustard

1 (1-pound) pork tenderloin

2 teaspoons Chipotle Premium Olive Oil, divided

1/4 teaspoon freshly ground black pepper

1/4 teaspoon garlic powder

Salt to taste
Directions
In a small saucepan, combine the Vermont Maple Dark Balsamic Vinegar and red pepper flakes.
Heat over high heat until the mixture begins to softly bubble.
Turn off the heat and whisk in the Dijon mustard. Set aside.
Slice the pork tenderloin into 8 equal pieces.
Place 4 of the pork pieces between sheets of foil or plastic wrap and pound until each piece is about 1/4-inch thick.
Heat 1 teaspoon of Chipotle Premium Olive Oil in a skillet over medium-high heat.
Season the pounded pork pieces with salt, black pepper, and garlic powder.
Once the oil is hot, add the pork and cook for 90 seconds per side.
Transfer the cooked pork to a plate.
Repeat the process with the remaining 4 pork pieces, using the second teaspoon of oil.
Return all of the cooked pork to the skillet.
Pour in the maple balsamic sauce and cook for 1 minute, turning the pork to coat it in the glaze.
Serve immediately.
