Grilled Zucchini-Wrapped Feta Skewers with Basil Olive Oil
Share
There are some recipes that feel like summer on a platter, and these Grilled Zucchini Wrapped Feta Skewers with Basil Olive Oil are exactly that.
They’re colorful, fresh, and just a little different from the usual grilled side dish. Tender zucchini ribbons are wrapped around creamy feta, tucked onto skewers with sweet cherry tomatoes, and brushed with Basil Olive Oil for a bright, herby finish.
I love recipes like this because they look beautiful on the table, but they’re actually very simple to make. The zucchini softens just enough on the grill, the tomatoes become juicy and lightly blistered, and the feta turns warm and just a little creamy in the center.
The Basil Olive Oil is what really ties everything together. It gives the skewers that lovely fresh basil flavor without needing much else, and it works beautifully with the zucchini, feta, and tomatoes.
A little dried oregano, salt, and pepper are all you need to let those Mediterranean flavors shine.
These skewers are wonderful as an appetizer, a light lunch, or a side dish with grilled chicken, fish, or lamb. They’re also a fun addition to a summer entertaining board when you want something fresh and a little unexpected.
If you’re looking for a grilled zucchini recipe that feels easy, elegant, and full of fresh flavor, this one is definitely worth making.
Simple ingredients, beautiful color, and just the kind of dish that disappears quickly.
