A rich and comforting roasted tomato soup made with Garlic Olive Oil, Gravenstein Apple White Balsamic, fresh tomatoes, apple, and a touch of cream for a smooth, balanced finish.
Ingredients

8 tomatoes

½ red onion, sliced

½ red apple, sliced

¼ cup Garlic Olive Oil

4 Tbsp Gravenstein Apple White Balsamic Vinegar

2 cups chicken stock
-
Sea salt, to taste

Ground black pepper, to taste

¼ cup heavy cream
Directions
Preheat oven to 400°F.
Place tomatoes, sliced red onion, and sliced apple on a roasting pan.
Drizzle with Garlic Olive Oil and Gravenstein Apple White Balsamic. Season with sea salt and ground pepper. Toss gently to coat.
Roast for 40 minutes, until onions are caramelized and tomatoes begin to wrinkle.
Transfer everything from the roasting pan to a large saucepan, scraping up any browned bits from the pan for extra flavor.
Add chicken stock and bring to a light simmer over medium heat.
Stir in the heavy cream.
Using an immersion blender, blend until smooth and creamy. (Alternatively, carefully transfer to a blender in batches.)
Taste and adjust seasoning if needed. Serve immediately.
