INGREDIENTS:
- 1 Bag of pre-washed, ribbed and chopped kale
- 4 Small Sweet Potatoes
- 4 Tbsp crushed pistachios
- 2 Tbsp Premium Extra Virgin Olive Oil
- 3 Tbsp Premium Garlic Oil
- 1 Tbsp Lime juice
- 2 tsp honey
- Kosher Salt
- Fresh ground Pepper
INSTRUCTIONS:
- Preheat the oven to 375 degrees.
- Add chopped kale to a large bowl and top with lime juice and the 2 Tbsp of EVOO. Use clean hands to massage for about 3 minutes to soften the leaves and infuse the leaves with the oil and lime juice. A pinch of salt added near the end of massaging adds even more flavor.
- Whisk 1 Tbsp garlic oil, honey and salt and pepper in a small bowl until emulsified.
- Clean and slice the sweet potatoes into ¼” discs.
- Toss potatoes with 2 Tbsp of the garlic oil and salt and pepper
- Lay in a single layer on a parchment lined baking sheet and roast until golden brown (about 30 minutes)
- Divide kale onto 4 large plates and top with warm, roasted sweet potatoes and crushed pistachios.
- Drizzle a small amount of dressing and top with desired protein. Serve with lime slices for an additional zing
I look forward to trying this. I’ve been told by my nutritionist that I need to eat more of these ingredients in my diet.
