Simple Summer Slaw (That Goes With Just About Everything)

There are certain recipes I come back to again and again in the summer. Not because they’re fancy… but because they work. They’re fresh, they’re quick, and they make everything else on the plate taste better.

This Simple Summer Slaw is exactly that kind of recipe.

I first started making slaw like this when I wanted something lighter than the traditional creamy versions we grew up with at picnics. Don’t get me wrong — those have their place — but sometimes you want something that feels crisp, bright, and a little zippy.

This slaw checks all those boxes.

The cabbage is lightly salted and massaged first. It sounds like a funny step, but it makes all the difference. It softens the cabbage just enough so the dressing can coat every strand without becoming watery later.

Then comes the good part: a simple dressing with olive oil mayonnaise, a drizzle of Premium Extra Virgin Olive Oil, and fresh lime juice. It’s creamy but still light, and the lime brings that little pop of freshness that makes the whole bowl taste like summer.

From there we add a handful of flavor:

  • Fresh scallions
  • Grated carrot for sweetness
  • Bright cilantro
  • A little minced jalapeño for a gentle kick

The result is a slaw that’s crunchy, lively, and full of flavor without feeling heavy.

Around here we pile it onto fish tacos, grilled chicken, pulled pork sandwiches, or just serve it alongside something hot off the grill. And honestly, sometimes I just grab a fork and eat it straight from the bowl while standing in the kitchen.

No judgment if you do the same.

If you're looking for a simple side that makes summer meals feel fresh and easy, this one belongs in your regular rotation.

This fresh and crunchy Simple Summer Slaw combines cabbage, carrot, scallions, cilantro, and jalapeño with a light lime dressing made with olive oil mayonnaise and Premium Extra Virgin Olive Oil. It's a bright, flavorful side that pairs perfectly with grilled meats, tacos, or sandwiches.

Side Dishes

Ingredients

  • 4 cups shredded cabbage
  • ½ tsp kosher salt
  • 1 Tbsp freshly squeezed lime juice
  • 1 Tbsp olive oil mayonnaise
  • 1 Tbsp Premium Extra Virgin Olive Oil
  • 2 medium scallions, thinly sliced
  • 1 small carrot, grated
  • ¼ cup chopped fresh cilantro
  • 1 small jalapeño, seeded and minced
  • ½ tsp garlic powder
  • Freshly ground pepper
  • ½ tsp Franklin Raw Honey for a touch of sweetness
  • Thinly sliced radishes for extra crunch
  • A sprinkle of toasted sesame seeds
  • A squeeze of extra lime before serving

Directions

  1. Place the shredded cabbage in a colander set over a bowl. Sprinkle with kosher salt and gently massage the cabbage to help soften it.
  2. Let the cabbage sit for 5 minutes, then squeeze it with paper towels to remove excess liquid. Allow it to rest another 15 minutes.
  3. In a large bowl, whisk together the olive oil mayonnaise, Premium Extra Virgin Olive Oil, and fresh lime juice until smooth.
  4. Working one handful at a time, squeeze any remaining liquid from the cabbage and add it to the bowl with the dressing.
  5. Add the grated carrot, sliced scallions, chopped cilantro, minced jalapeño, and garlic powder.
  6. Toss everything together until well coated.
  7. Taste and season with freshly ground pepper and additional salt if needed.
