Simple Summer Slaw (That Goes With Just About Everything)
There are certain recipes I come back to again and again in the summer. Not because they’re fancy… but because they work. They’re fresh, they’re quick, and they make everything else on the plate taste better.
This Simple Summer Slaw is exactly that kind of recipe.
I first started making slaw like this when I wanted something lighter than the traditional creamy versions we grew up with at picnics. Don’t get me wrong — those have their place — but sometimes you want something that feels crisp, bright, and a little zippy.
This slaw checks all those boxes.
The cabbage is lightly salted and massaged first. It sounds like a funny step, but it makes all the difference. It softens the cabbage just enough so the dressing can coat every strand without becoming watery later.
Then comes the good part: a simple dressing with olive oil mayonnaise, a drizzle of Premium Extra Virgin Olive Oil, and fresh lime juice. It’s creamy but still light, and the lime brings that little pop of freshness that makes the whole bowl taste like summer.
From there we add a handful of flavor:
- Fresh scallions
- Grated carrot for sweetness
- Bright cilantro
- A little minced jalapeño for a gentle kick
The result is a slaw that’s crunchy, lively, and full of flavor without feeling heavy.
Around here we pile it onto fish tacos, grilled chicken, pulled pork sandwiches, or just serve it alongside something hot off the grill. And honestly, sometimes I just grab a fork and eat it straight from the bowl while standing in the kitchen.
