Ingredients
- 2 lbs ground beef (or a mix of beef & pork)
- 1 cup breadcrumbs
- 1 cup milk
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 2 Tbsp Premium Extra Virgin Olive Oil

1 cup Traditional Dark Balsamic Vinegar, divided
- 2 large eggs
- 2 tsp Worcestershire sauce
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp paprika
- Salt, to taste
- Black pepper, to taste
- ½ cup ketchup
- 2 Tbsp brown sugar
- Chopped parsley, for garnish
Directions
- Preheat oven to 350 °F (175 °C).
- Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook another minute. Remove from heat and let cool slightly.
- In a small saucepan, bring ½ cup balsamic vinegar to a simmer. Reduce until thick and syrupy (10–15 minutes). Set aside.
- In a large bowl, soak breadcrumbs in milk until absorbed.
- Add ground meat, cooled onion and garlic, reduced balsamic, eggs, Worcestershire, oregano, thyme, paprika, salt, and pepper. Mix gently.
- Transfer mixture to a loaf pan or lined baking sheet, shaping into a loaf.
- In a small bowl, whisk together ketchup, remaining ½ cup balsamic vinegar, and brown sugar to make the glaze.
- Spread half the glaze over the loaf.
- Bake for 45 minutes.
- Remove, spread remaining glaze, and bake another 15–20 minutes, or until internal temperature reaches 160 °F (71 °C).
- Let rest for 10 minutes before slicing.
- Garnish with chopped parsley and serve.
