Good bread. Juicy tomatoes. Fresh herbs. And olive oil that actually tastes like something. That’s it. No need to complicate things.
This bruschetta is fresh, bright, and full of flavor without being heavy. The tomatoes are chopped small so every bite gets a little bit of everything, the bread is toasted just enough to hold up, and the Basil Olive Oil brings it all together with that clean, herb-forward finish that makes it feel unmistakably Italian.
Sometimes I’ll finish it with a tiny drizzle of Traditional Balsamic — not to sweeten it, just to add depth. It’s optional, but lovely.

Fresh tomato bruschetta made with Basil Olive Oil, herbs, and toasted bread. Simple, vibrant, and perfect for easy entertaining or a light bite.
Ingredients
- 1 baguette, sliced
- 3 ripe tomatoes, finely diced
- 2 tablespoons finely chopped fresh basil
- 1 tablespoon finely diced red onion

3 tablespoons Basil Olive Oil, plus more for brushing bread
- Salt and freshly ground black pepper, to taste

Optional: Traditional Balsamic Vinegar, for finishing
- Optional: fresh arugula or basil leaves for topping
Directions
- Preheat oven to 400°F. Brush baguette slices lightly with Basil Olive Oil and toast until golden, about 8–10 minutes.
- In a bowl, combine tomatoes, basil, red onion, Basil Olive Oil, salt, and pepper. Stir gently.
- Let the mixture rest for 5–10 minutes so the flavors come together.
- Spoon tomato mixture onto toasted bread just before serving.
- Finish with a light drizzle of Traditional Balsamic if using.
- Top with fresh arugula or basil leaves and serve immediately.
