Classic Tomato Bruschetta with Basil Olive Oil at The Little Shop of Olive Oils

Bruschetta, the Way I Always Want It

This is one of those recipes that reminds me why simple food is usually the best food.

Good bread. Juicy tomatoes. Fresh herbs. And olive oil that actually tastes like something. That’s it. No need to complicate things.

This bruschetta is fresh, bright, and full of flavor without being heavy. The tomatoes are chopped small so every bite gets a little bit of everything, the bread is toasted just enough to hold up, and the Basil Olive Oil brings it all together with that clean, herb-forward finish that makes it feel unmistakably Italian.

Sometimes I’ll finish it with a tiny drizzle of Traditional Balsamic — not to sweeten it, just to add depth. It’s optional, but lovely.

This is the kind of appetizer that works year-round. Perfect for entertaining, perfect for wine nights, and honestly perfect standing at the counter “just tasting” before anyone else arrives.
