This limited production early Kalamata has intense pepper on the finish and is highly astringent, with notes of arugula, green tea, apple peel and rose petal. The combination of picking the fruit at an extremely low green maturity index (early harvest) and the minimal processing resulted in high phenol content and the highest amount of Oleocanthal we have ever seen at 453.2 ppm.

Our Kalamata Reserve is also our extremely high phenols of 1576. The high phenol Kalamata Reserve has:

A total Phenol content of 1,576 ppm which includes 1,022 ppm of Oleocanthal using
NMR method (64% oleocanthal) a total phenol content of 505.3 ppm which includes 338.1 ppm! of Oleocanthal using HPLC method  (67% oleocanthal)
