A rich, comforting soup with caramelized onions, warm broth, toasted baguette, and gooey Gruyère cheese.
Ingredients
- 4 large yellow onions, thinly sliced

3 tbsp Extra Virgin Olive Oil
- 2 tbsp butter (optional, for richer flavor)
- 2 cloves garlic, minced
- 1 tsp sugar
- 1 cup dry red wine (optional, for deglazing)
- 6 cups beef broth (or vegetable broth for vegetarian)
- 2 bay leaves
- 4–6 sprigs fresh thyme (plus more for garnish)
- Salt and freshly ground black pepper, to taste
- 1 baguette, sliced and toasted
- 2 cups grated Gruyère cheese
Directions
- Heat olive oil (and butter, if using) in a large pot over medium heat.
- Add onions and cook slowly, stirring often, until golden and caramelized (30–40 minutes).
- Stir in garlic and sugar; cook 2–3 minutes until fragrant.
- Deglaze with red wine (if using), scraping up any browned bits.
- Add broth, bay leaves, thyme sprigs, salt, and pepper. Simmer uncovered for 20 minutes.
- Preheat broiler. Place baguette slices on a baking sheet and toast until crisp.
- Remove bay leaves and thyme sprigs from soup. Ladle soup into oven-safe bowls.
- Top each with 1–2 toasted baguette slices and a generous handful of Gruyère.
- Broil until cheese is melted, bubbling, and lightly browned (2–4 minutes).
- Garnish with fresh thyme leaves and serve hot.

- Gruyère is traditional, but Swiss or Fontina work as substitutes.

I love French Onion soup and toasted Bread. I have not tried this cheese. But l will. If it wonderful. Great. If not to my taste, I will go back to Swiss cheese. This next month. February.
