Ingredients:
- 1-pound mixed vegetables (such as bell peppers, zucchini, and red onions), chopped
- 1/4 cup Peach White Balsamic Vinegar
- 2 tablespoons Chipotle Premium Olive Oil
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
- Preheat oven to 400°F (200°C).
- In a large bowl, mix peach balsamic vinegar, chipotle olive oil, oregano, salt, and pepper.
- Add chopped vegetables and toss to coat.
- Spread vegetables on a baking sheet and roast for 20-25 minutes, or until tender and slightly caramelized.
