Orange Cinnamon Marmalade

Ingredients:
- 4 large oranges (preferably organic)
- 1 lemon
- 3 cups of sugar
- 1 cup of water
- 2 tbsp Navel Orange Premium Olive Oil
- 2 cinnamon sticks
- ¼ tsp ground cinnamon (optional, for extra warmth)
Instructions:
- Wash the oranges and lemon thoroughly. Slice the oranges thinly, removing any seeds, and chop them into small pieces (including the peel). Squeeze the lemon juice and set it aside.
- In a large pot, combine the chopped oranges, lemon juice, water, and cinnamon sticks. Bring to a boil over medium heat, then reduce the heat and let it simmer for about 15 minutes, until the oranges soften.
- Stir in the sugar and Navel Orange Olive Oil. Continue simmering for another 30-45 minutes, stirring occasionally, until the mixture thickens to a jam-like consistency.
- To check if the marmalade is ready, drop a small spoonful onto a cold plate. If it wrinkles when pushed, it's done. If it’s still too runny, cook for a few more minutes and test again.
- Remove the cinnamon sticks and pour the marmalade into sterilized jars while hot. Seal tightly and cool. The marmalade will thicken further as it cools.
- Once cooled, store it in the fridge and enjoy it within a month. Spread on toast, pair with cheese, or use it to glaze meats for a sweet, citrusy kick!
