Ingredients
For the Cake

1/2 cup Butter Infused Olive Oil
- 1 cup granulated sugar
- 3 large eggs
- 1 tsp vanilla extract

1/3 cup Pineapple Balsamic Vinegar
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp salt
- 1/3 cup milk (or pineapple juice for more zing)
For the Glaze
- 1 cup powdered sugar

2–3 tbsp Pineapple Balsamic Vinegar (or more to thin)
- Optional: small pineapple wedge or zest for garnish
Directions
- Preheat the oven to 350°F and grease an 8" or 9" round or square cake pan.
- In a large bowl, whisk together the olive oil and sugar until smooth.
- Add the eggs, one at a time, then stir in vanilla and Pineapple Balsamic.
- In a separate bowl, combine the flour, baking powder, and salt.
- Gradually add the dry mixture to the wet, alternating with milk, mixing just until combined.
- Pour into the prepared pan and bake for 30–35 minutes, or until a toothpick comes out clean.
- Let cool completely before glazing.
To Make the Glaze
Whisk powdered sugar with Pineapple Balsamic Vinegar until smooth and pourable. Drizzle over the cooled cake and let set.
