A bright and bubbly Peach Bellini with a tropical twist, made with fresh peach, Pineapple White Balsamic, and Prosecco for a refreshing and elegant cocktail.
Ingredients
- 1 ripe peach or 2 oz peach nectar

1 oz Pineapple White Balsamic
- 1 tsp fresh lemon juice (optional, for brightness)
- 4 oz chilled Prosecco (or more to taste)

Fresh mint, for garnish

Peach or pineapple slice, for garnish
Directions
In a blender, combine the peach and Pineapple White Balsamic until smooth.
(If using peach nectar, simply stir with the balsamic.)
Add 1–2 tablespoons of the mixture into each champagne flute.
Slowly top with chilled Prosecco.
Gently stir to combine.
Garnish with fresh mint and a peach or pineapple slice.
Serve immediately and enjoy.
