Orzo Stuffed Pumpkin

Ingredients

  • 5 to 6 medium patty pan squash or small white pumpkins, about the size of a small orange
  • 3/4 cup orzo

  • 1/4 cup Basil Premium Olive Oil, divided

  • 1 small red onion, finely chopped

  • 1 small red bell pepper, finely diced

  • 1 small zucchini, finely diced

  • 1 small plum tomato, seeded and finely diced

  • 1/2 teaspoon Himalayan salt

  • 1/4 teaspoon cracked black pepper

  • 1/3 cup ricotta cheese

  • 1/4 cup grated Parmesan cheese, plus more for topping if desired

Directions

  1. Preheat the oven to 400°F.
  2. Cut the tops off the pumpkins or patty pan squash and scoop out the seeds. Reserve the tops.

  3. Place the pumpkins and tops on a baking sheet. Drizzle with about 1/2 tablespoon Basil Premium Olive Oil and sprinkle with a little salt and pepper.

  4. Roast for 15 minutes, just until the pumpkins begin to soften. Remove from the oven and let cool slightly.

  5. While the pumpkins roast, cook the orzo according to package directions. Drain and set aside.

  6. In a skillet, heat the remaining Basil Premium Olive Oil over medium-high heat.

  7. Add the red onion and sauté for 2 minutes.

  8. Add the red bell pepper, zucchini, and tomato. Sauté for another 2 to 3 minutes, just until the vegetables begin to soften.

  9. Remove the skillet from the heat. Stir in the cooked orzo, ricotta cheese, and Parmesan cheese until combined.

  10. Spoon the orzo filling into the roasted pumpkins.

  11. Sprinkle with an additional grating of Parmesan cheese, if desired.

  12. Return the filled pumpkins to the oven and bake for 8 to 10 minutes, until warmed through.

  13. Serve warm.
