Tomato Basil & Burrata Salad with Lemon Oregano Drizzle

Ingredients (Serves 4):

  • 1-pint cherry tomatoes (mixed colors), halved
  • 4 cups of fresh arugula or spring greens
  • 1 ball fresh burrata cheese (or 2 smaller balls)
  • ¼ cup fresh basil leaves, torn or sliced
  • Flaky sea salt & freshly ground black pepper, to taste

For the dressing:

Instructions:

  • In a small bowl or jar, whisk together the Lemon Olive Oil, Oregano Balsamic, Dijon mustard, and honey. Season with salt and pepper to taste.
  • Place greens in a large shallow bowl or platter. Scatter halved tomatoes and basil over the greens.
  • Tear burrata into pieces and nestle them into the salad.
  • Spoon the dressing generously over the top. Finish with a pinch of flaky sea salt and freshly cracked black pepper.
