Tomato Basil & Burrata Salad with Lemon Oregano Drizzle
Ingredients (Serves 4):
- 1-pint cherry tomatoes (mixed colors), halved
- 4 cups of fresh arugula or spring greens
- 1 ball fresh burrata cheese (or 2 smaller balls)

¼ cup fresh basil leaves, torn or sliced
- Flaky sea salt & freshly ground black pepper, to taste
For the dressing:
Instructions:
- In a small bowl or jar, whisk together the Lemon Olive Oil, Oregano Balsamic, Dijon mustard, and honey. Season with salt and pepper to taste.
- Place greens in a large shallow bowl or platter. Scatter halved tomatoes and basil over the greens.
- Tear burrata into pieces and nestle them into the salad.
- Spoon the dressing generously over the top. Finish with a pinch of flaky sea salt and freshly cracked black pepper.
