Grapefruit Arugula Salad
Share
There’s something about citrus in the middle of winter that feels like a little gift.
When everything outside is gray and heavy, this grapefruit arugula salad brings brightness back to the table. Peppery greens, juicy grapefruit, a little crunch from walnuts, a pop of sweetness from dried cranberries — and a simple dressing that ties it all together without weighing it down.
This is one of those salads that doesn’t try to be anything more than it is. Fresh ingredients. Great olive oil. A beautiful grapefruit white balsamic that adds just enough sweetness and acidity to balance the greens.
It’s perfect as a light lunch, a starter for dinner, or a side dish when you want something fresh next to roasted chicken or fish. And honestly? It’s the kind of salad that makes January feel a little more hopeful.
Simple. Colorful. And exactly what your body is craving right now.
