- 1 grapefruit (sliced into wedges)
- 2 cups of arugula
- 1/4 cup walnuts
- 1/4 cup dried cranberries
- 2 Tbsp Premium Extra Virgin Olive Oil
- 3 Tbsp Grapefruit White Balsamic
- 1 tsp Dijon Mustard
- 1 small shallot (minced)
- Salt and pepper
- In a salad bowl add the arugula, walnuts, cranberries, and grapefruit.
- In a small bowl mix together the olive oil, balsamic, Dijon, shallot, salt, and pepper.
- Drizzle of the salad and serve immediately. Enjoy!
