Red, White & Blueberry Balsamic Chicken Skewers
Ingredients
- 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
- 1 red bell pepper, cut into chunks
- 1/2 pint fresh blueberries
- 2 Tbsp Garlic Olive Oil (The Little Shop of Olive Oils)
- 2 Tbsp Blueberry Balsamic Vinegar (The Little Shop of Olive Oils)
- 1 tsp Dijon mustard
- 1/2 tsp salt
- Fresh cracked black pepper
- Skewers (wooden or metal)
- Optional garnish: chopped fresh parsley or basil
Instructions
- In a bowl, whisk together Garlic Olive Oil, Blueberry Balsamic, Dijon mustard, salt, and pepper.
- Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
- Thread marinated chicken, red bell pepper, and fresh blueberries onto skewers, alternating for a patriotic pattern.
- Preheat grill or grill pan over medium-high heat.
- Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and nicely charred.
- Drizzle with an extra touch of Blueberry Balsamic before serving. Sprinkle with chopped fresh herbs if desired.
