Red, White & Blueberry Balsamic Chicken Skewers

Ingredients

  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1/2 pint fresh blueberries
  • 2 Tbsp Garlic Olive Oil (The Little Shop of Olive Oils)
  • 2 Tbsp Blueberry Balsamic Vinegar (The Little Shop of Olive Oils)
  • 1 tsp Dijon mustard
  • 1/2 tsp salt
  • Fresh cracked black pepper
  • Skewers (wooden or metal)
  • Optional garnish: chopped fresh parsley or basil

Instructions

  • In a bowl, whisk together Garlic Olive Oil, Blueberry Balsamic, Dijon mustard, salt, and pepper.
  • Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
  • Thread marinated chicken, red bell pepper, and fresh blueberries onto skewers, alternating for a patriotic pattern.
  • Preheat grill or grill pan over medium-high heat.
  • Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and nicely charred.
  • Drizzle with an extra touch of Blueberry Balsamic before serving. Sprinkle with chopped fresh herbs if desired.
