  • 1 lb boneless, skinless chicken breast, cut into 1-inch cubes
  • 1 red bell pepper, cut into chunks
  • ½ pint fresh blueberries
  • 2 tablespoons Garlic Olive Oil
  • 2 tablespoons Blueberry Balsamic Vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • Fresh cracked black pepper, to taste
  • Skewers (wooden or metal)
  • Optional garnish: chopped fresh parsley or basil

Directions

  1. In a bowl, whisk together garlic olive oil, blueberry balsamic, Dijon mustard, salt, and pepper.
  2. Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
  3. Thread marinated chicken, red bell pepper, and blueberries onto skewers, alternating for color.
  4. Preheat grill or grill pan to medium-high heat.
  5. Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
