Ingredients

1 lb boneless, skinless chicken breast, cut into 1-inch cubes

1 red bell pepper, cut into chunks

½ pint fresh blueberries

2 tablespoons Garlic Olive Oil

2 tablespoons Blueberry Balsamic Vinegar

1 teaspoon Dijon mustard

½ teaspoon salt

Fresh cracked black pepper, to taste

Skewers (wooden or metal)

Directions
In a bowl, whisk together garlic olive oil, blueberry balsamic, Dijon mustard, salt, and pepper.
Add chicken pieces and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
Thread marinated chicken, red bell pepper, and blueberries onto skewers, alternating for color.
Preheat grill or grill pan to medium-high heat.
Grill skewers for 10–12 minutes, turning occasionally, until chicken is cooked through and lightly charred.
