Smoky, tender ribs coated in a sweet and spicy pineapple chipotle glaze made with Chipotle Olive Oil and Pineapple White Balsamic for a bold, flavorful main dish.
Ingredients
- 2 racks baby back ribs (about 4 lbs)
- 2 tbsp brown sugar
- 1 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- ½ tsp black pepper
-
2 tbsp Chipotle Olive Oil (for rubbing)
For the Glaze
-
½ cup Pineapple White Balsamic
- ⅓ cup honey
- 2 tbsp soy sauce
- 1 tbsp ketchup
- 1 tsp Dijon mustard
- Optional: a pinch of red pepper flakes for extra heat
Directions
Preheat oven to 300°F. Remove the silver skin from the back of the ribs. Pat dry.
Mix brown sugar, paprika, garlic powder, onion powder, salt, and pepper. Rub ribs with Chipotle Olive Oil, then coat evenly with spice mix.
Wrap ribs in foil and place on a baking sheet. Bake at 300°F for 2.5–3 hours until tender.
While ribs bake, combine balsamic, honey, soy sauce, ketchup, and Dijon in a saucepan. Simmer for 8–10 minutes until thickened.
Remove ribs from foil, brush with glaze, and grill or broil on high for 3–5 minutes per side until caramelized and sticky.
Rest a few minutes, slice, and serve with extra glaze on the side.
Recipe Note
Optional Variations
Add red pepper flakes for extra heat
Finish with fresh lime juice for brightness
Serve with mango pineapple salsa for a tropical pairing
Use the grill instead of oven for a smokier finish
Tracey’s Notes
These ribs are one of those recipes that feel a little impressive but are actually pretty simple to pull together. The Chipotle Olive Oil gives them that deep, smoky flavor, while the Pineapple White Balsamic adds just the right amount of sweetness to balance it out. Once they hit the grill and that glaze caramelizes, they’re sticky, flavorful, and always the first thing to disappear.
