
Pan-Seared Lemon Cod

Ingredients
- 4 cod fillets (about 5–6 oz each)
- 2 tbsp extra virgin olive oil
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 lemon, sliced into rounds (plus more for garnish)
- 1 tbsp lemon juice
- 1 tbsp fresh parsley or green onions, chopped
- Salt and pepper to taste
Instructions
- Pat the cod dry with a paper towel and season both sides with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Sear the cod fillets for 3–4 minutes per side until golden and cooked through (they’ll flake easily with a fork). Remove the fish and set aside.
- In the same skillet, reduce heat to medium and add the butter and minced garlic. Cook for 1 minute until fragrant.
- Stir in the lemon slices and lemon juice. Cook another 1–2 minutes to let the flavors come together.
- Return the cod to the skillet to warm, spooning the lemon-garlic butter sauce over the top.
- Garnish with parsley or green onions and serve with extra lemon wedges.
Pair with a Mediterranean-style couscous salad or some roasted vegetables — and don’t forget a glass of crisp Sauvignon Blanc or dry Rosé!
