Ingredients
- 12 oz linguini
-
2 tbsp Garlic Olive Oil
- 1 lb chicken breast, cut into bite-sized pieces
- 1 tsp sea salt
- ½ tsp black pepper
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- ¼ cup pasta water (reserved from cooking)
- Fresh parsley, chopped (for garnish)
Directions
- Cook the pasta: Boil linguini in salted water according to package instructions. Reserve ¼ cup pasta water before draining.
- Sauté the chicken: In a large skillet, heat 1 tbsp Garlic Olive Oil over medium heat. Add chicken, season with salt and pepper, and cook until golden and cooked through. Remove from pan and set aside.
- Cook mushrooms & garlic: Add remaining 1 tbsp Garlic Olive Oil to the same pan. Sauté mushrooms until browned (about 5 minutes), then add garlic and cook for another minute.
- Make the sauce: Reduce heat to low, stir in the heavy cream, and let it gently simmer. Add the Parmesan cheese and reserved pasta water, stirring until smooth.
- Combine everything: Return the chicken to the pan, then add drained pasta. Toss everything together until well coated and heated through.
- Serve: Plate and garnish with fresh parsley and a little extra Parmesan if you’d like. Serve warm!
