Ingredients:
For the Apple Filling:
- 6 cups apples (about 6-8 medium-sized), peeled, cored, and sliced
- 1/2 cup granulated sugar
- 2 tablespoons Cinnamon Pear Dark Balsamic Vinegar
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon all-purpose flour
- Zest of 1 lemon
For the Cobbler Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 cup Butter Premium Extra Virgin Olive Oil
- 1/2 cup milk
- 1 teaspoon vanilla extract
Instructions:
- Preheat your oven to 350°F. Grease a 9x9-inch baking dish or a similar-sized ovenproof dish.
- In a large mixing bowl, combine the sliced apples, granulated sugar, balsamic vinegar, ground cinnamon, ground nutmeg, all-purpose flour, and lemon zest.
- Toss everything together until the apples are evenly coated with the mixture.
- Spread the apple mixture evenly in the greased baking dish.
- In another mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- In a separate small bowl, mix together the extra virgin olive oil (EVOO), milk, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix; a few lumps are okay.
- Drop spoonfuls of the cobbler topping mixture evenly over the apples in the baking dish. It doesn't need to be perfect; rustic is good!
- Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the cobbler topping is golden brown, and the apple filling is bubbling.
- Allow the apple cobbler to cool slightly before serving. It's delicious on its own, but you can also serve it with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
