Lemongrass Mint White Balsamic Mojito
Share
I love taking something familiar and giving it a little twist.
A classic mojito is already refreshing — mint, lime, rum, a little sparkle — but when you add Lemongrass Mint White Balsamic Vinegar, everything changes in the best way. The balsamic adds depth and a gentle sweetness, with that soft lemongrass note that makes the whole drink feel layered and bright.
It’s still light. Still crisp. Still incredibly refreshing. But there’s something a little more interesting happening in every sip.
This is the kind of cocktail that makes people pause and say, “What did you add to this?” And that’s always a good sign.
Serve it over ice, garnish it generously, and enjoy it slowly. It’s a simple way to make the moment feel special.

A refreshing twist on the classic mojito made with Lemongrass Mint White Balsamic Vinegar, fresh lime juice, mint, and white rum for a bright and layered cocktail.
Ingredients
-
8 fresh mint leaves, plus extra for garnish
-
2 teaspoons sugar (or to taste)
-
2 ounces white rum
-
1 ounce Lemongrass Mint White Balsamic Vinegar
-
1 ounce fresh lime juice
-
Ice cubes
-
4 ounces club soda
-
Lime slices, for garnish
Directions
In a sturdy glass, combine the mint leaves and sugar. Muddle gently to release the mint oils and dissolve the sugar into a paste.
Add the white rum, Lemongrass Mint White Balsamic Vinegar, and fresh lime juice. Stir well to combine.
Fill the glass with ice cubes, leaving room at the top.
Pour in the club soda until nearly full.
Stir gently to mix.
Garnish with additional mint leaves and lime slices. Serve immediately.
Recipe Note
Tracey’s Notes
- Don’t over-muddle the mint — you want to release the oils, not shred the leaves.
- Adjust sweetness to your preference.
- For a mocktail version, simply skip the rum and add a splash more club soda.
