Raspberry Basil Quinoa Salad

This salad just makes me smile.
It’s fresh and a little unexpected — fluffy quinoa tossed with sweet raspberries, juicy blueberries, creamy goat cheese, and fresh basil. Then we drizzle it with a dressing made from Basil Premium Olive Oil, Lemon Premium Olive Oil, and our Raspberry Dark Balsamic.
The basil oil brings a soft herbal note. The lemon oil keeps everything light and bright. And the raspberry balsamic ties the berries and goat cheese together beautifully.
Add a little crunch from slivered almonds, maybe some walnuts on top, and you have a salad that feels balanced and colorful without being complicated.
It’s perfect for lunch, potlucks, or as a side for grilled chicken or salmon.

Ingredients

1 cup cooked quinoa (prepared according to package instructions)

4 Tbsp slivered almonds

2 Tbsp fresh basil leaves, chopped

2 Tbsp Basil Premium Olive Oil

2 Tbsp Lemon Premium Olive Oil

1 Tbsp Raspberry Dark Balsamic Vinegar

1 Tbsp Franklin Raw Honey

Salt, to taste

Freshly ground black pepper, to taste

1 cup fresh raspberries
-
½ cup fresh blueberries

8 Tbsp crumbled goat cheese

Fresh mint and walnuts (optional, for garnish)
Directions
In a small bowl, whisk together Basil Olive Oil, Lemon Olive Oil, Raspberry Dark Balsamic, honey, salt, and freshly ground black pepper. Set aside.
In a large salad bowl, combine cooked quinoa, slivered almonds, and chopped basil.
Pour the dressing over the quinoa mixture and toss until well combined.
Gently fold in goat cheese, raspberries, and blueberries.
Garnish with fresh mint and walnuts if desired.
Serve immediately.
