Cranberry Arugula Salad
For the Salad:
- Optional: Lemon peel (for garnish)
For the Dressing:
- ½ cup lemon olive oil
- ¼ cup cranberry pear balsamic
- 1 Tbsp Dijon mustard or mayo
- In a large salad bowl combine the arugula, walnuts, and cranberries.
- In a small bowl, whisk together the olive oil, balsamic, and mustard or mayo until combined.
- Drizzle over the salad and serve immediately. Enjoy!
