Citrus & Arugula Salad with Grapefruit Vinaigrette

Ingredients:

  • 4 cups mixed greens (arugula, baby spinach, red leaf lettuce)
  • 1 grapefruit, peeled and segmented
  • ¼ red onion, thinly sliced
  • ¼ cup toasted almonds or pistachios
  • ¼ cup crumbled feta or goat cheese (optional)

Grapefruit Vinaigrette:

  • 3 tbsp extra virgin olive oil (try navel orange or lemon olive oil for extra flavor)
  • 2 tbsp fresh grapefruit juice
  • 1 tbsp white balsamic vinegar
  • 1 tsp honey
  • ½ tsp Dijon mustard
  • Salt & pepper to taste

Instructions:

  • Toss the mixed greens, grapefruit segments, red onion, and nuts in a large bowl.
  • Whisk together all vinaigrette ingredients until well combined.
  • Drizzle over the salad and toss gently to coat.
  • Sprinkle with feta or goat cheese (if using).

Serve fresh and enjoy!
