
Citrus & Arugula Salad with Grapefruit Vinaigrette

Ingredients:
- 4 cups mixed greens (arugula, baby spinach, red leaf lettuce)
- 1 grapefruit, peeled and segmented
- ¼ red onion, thinly sliced
- ¼ cup toasted almonds or pistachios
- ¼ cup crumbled feta or goat cheese (optional)
Grapefruit Vinaigrette:
- 3 tbsp extra virgin olive oil (try navel orange or lemon olive oil for extra flavor)
- 2 tbsp fresh grapefruit juice
- 1 tbsp white balsamic vinegar
- 1 tsp honey
- ½ tsp Dijon mustard
- Salt & pepper to taste
Instructions:
- Toss the mixed greens, grapefruit segments, red onion, and nuts in a large bowl.
- Whisk together all vinaigrette ingredients until well combined.
- Drizzle over the salad and toss gently to coat.
- Sprinkle with feta or goat cheese (if using).
Serve fresh and enjoy!
