There’s something timeless about a shrub.
It feels a little old-world, a little handcrafted — and I love that. When you make a shrub, you’re not just mixing a drink. You’re letting flavors develop slowly, thoughtfully.
This one starts with fresh grapefruit peel muddled into sugar to release those beautiful citrus oils. Add juicy grapefruit segments and our Grapefruit White Balsamic, and suddenly you have this bright, layered syrup that’s sweet, tart, and incredibly refreshing.
After a few days in the refrigerator, the flavors deepen and soften. The result is a gorgeous grapefruit shrub syrup that feels complex without being complicated.
When you pour it over ice and top it with sparkling seltzer, it becomes light, bubbly, and perfectly balanced. Not overly sweet. Not overly tart. Just refreshing.

Ingredients
For the Shrub Syrup

1 cup granulated sugar

Peel from one medium grapefruit

1 cup fresh grapefruit segments

1 cup Grapefruit White Balsamic Vinegar
For the Sparkling Mocktail

1 oz grapefruit shrub syrup
-
Chilled seltzer water
-
Ice
Optional Garnish

Fresh rosemary sprig

Grapefruit wedges
Directions
To Make the Shrub Syrup
Place sugar in a large pitcher or mason jar.
Add grapefruit peel and muddle together to release the citrus oils.
Add grapefruit segments and continue to muddle gently.
Allow the mixture to sit for 10 minutes.
Stir in Grapefruit White Balsamic Vinegar until fully combined.
Cover and refrigerate for 2–4 days, depending on desired flavor depth.
Strain out solids and store the finished syrup in the refrigerator until ready to use.
To Make the Sparkling Grapefruit Shrub Mocktail
Fill a serving glass with ice.
Add 1 oz of grapefruit shrub syrup.
Top with chilled seltzer water.
Stir gently to combine.
Garnish with rosemary and grapefruit wedges if desired.

- The longer the shrub steeps, the deeper and more rounded the flavor becomes.
- This syrup also makes a wonderful cocktail base — just add vodka or gin.
- Keep refrigerated and use within two weeks for best flavor.
