Ingredients:
- 5 oz vodka
- 1 oz The Little Shop Cucumber Balsamic Vinegar
- 5 oz tomato water (strained tomato juice)
- 5 oz lemon juice
- 5 oz The Little Shop Extra Virgin Olive Oil
- A dash of Greek oregano
- A pinch of sea salt
- A pinch of black pepper
- 1 cherry tomato, for garnish
- 1 cucumber slice, for garnish (optional)
- 1 olive, for garnish (optional)
Instructions:
- To make tomato water, blend fresh tomatoes and strain through a fine sieve or cheesecloth to extract the clear juice.
- In a cocktail shaker, combine the vodka, cucumber balsamic, tomato water, lemon juice, extra virgin olive oil, a dash of oregano, sea salt, and black pepper.
- Fill the shaker with ice and shake vigorously for about 15 seconds.
- Strain the mixture into a chilled cocktail glass.
- Skewer a cherry tomato, cucumber slice, and olive on a cocktail pick and place it in the glass.
- Add a few drops of EVOO for additional garnish!
