Pico de Gallo with a Twist

Ingredients:

  • 4 ripe tomatoes, finely diced
  • 1/2 red onion, finely chopped
  • 1-2 jalapeno peppers, seeds removed and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt to taste
  • Freshly ground black pepper to taste

Twist:

Instructions:

  • In a medium bowl, combine the diced tomatoes, chopped red onion, and jalapeno peppers.
  • Add the chopped cilantro and mix well.
  • Drizzle the garlic-infused olive oil over the mixture.
  • Squeeze the fresh lime juice into the bowl and mix until everything is evenly coated.
  • Drizzle the pineapple balsamic vinegar over the Pico de Gallo.
  • Season with salt and freshly ground black pepper to taste. Mix everything together gently.
  • Taste your Pico de Gallo and adjust the seasoning if necessary. You can add more lime juice, salt, or pineapple balsamic for a sweeter taste.

Serve immediately with tortilla chips, or as a topping for tacos, grilled meats, or salads.
