
Melon & Mascarpone Tartlets with Strawberry Balsamic Drizzle

Ingredients (Makes 6 tartlets):
- 6 mini tartlet shells (store-bought or homemade)
- 1 cup mascarpone cheese
- 2 tbsp Franklin Raw Honey
- ½ tsp vanilla extract
- 1 cup melon balls (cantaloupe or honeydew work beautifully)
- 2 tbsp Strawberry Dark Balsamic Vinegar
- 2 tbsp chopped pistachios (optional, for garnish)
Instructions:
- In a bowl, whisk together the mascarpone, honey (or maple), and vanilla extract until smooth and creamy.
- Spoon the mascarpone filling into each tartlet shell and gently spread it to the edges.
- Add 2–3 melon balls on top of each tartlet.
- Generously spoon Strawberry Dark Balsamic over each tartlet for a rich, tangy-sweet finish.
- Sprinkle with chopped pistachios for crunch and color.
- Chill until ready to serve. Best enjoyed the same day!
