Melon & Mascarpone Tartlets with Strawberry Balsamic Drizzle

Ingredients (Makes 6 tartlets):

  • 6 mini tartlet shells (store-bought or homemade)
  • 1 cup mascarpone cheese
  • 2 tbsp Franklin Raw Honey
  • ½ tsp vanilla extract
  • 1 cup melon balls (cantaloupe or honeydew work beautifully)
  • 2 tbsp Strawberry Dark Balsamic Vinegar
  • 2 tbsp chopped pistachios (optional, for garnish)

Instructions:

  • In a bowl, whisk together the mascarpone, honey (or maple), and vanilla extract until smooth and creamy.
  • Spoon the mascarpone filling into each tartlet shell and gently spread it to the edges.
  • Add 23 melon balls on top of each tartlet.
  • Generously spoon Strawberry Dark Balsamic over each tartlet for a rich, tangy-sweet finish.
  • Sprinkle with chopped pistachios for crunch and color.
  • Chill until ready to serve. Best enjoyed the same day!
