Ingredients: 1 cup Greek yogurt (full-fat for best texture) 1/2 English cucumber, grated and drained 1 tbsp Garlic Olive Oil (from The Little Shop of Olive Oils) 1 tbsp fresh lemon juice 1 clove garlic, minced (or more for extra garlic flavor) 1 tbsp fresh dill or mint, finely chopped 1/2 tsp salt 1/4 tsp black pepper Instructions: Grate and drain the cucumber – after grating, squeeze out excess water using a clean towel or paper towels. In a bowl, mix the Greek yogurt, Garlic Olive Oil, lemon juice, minced garlic, salt, and pepper. Stir in the drained cucumber and fresh herbs. Let the dip chill in the fridge for at least 30 minutes to allow flavors to blend. Drizzle with a little more Garlic Olive Oil before serving.
