Creamy Egg Salad


  • ¼ cup mayonnaise
  • 1 teaspoon Premium Extra Virgin Olive Oil
  • 1 baguette sliced into 1” pieces
  • 2 teaspoons Dijon mustard
  • 1 teaspoon fresh lemon juice
  • 1 small garlic clove, minced
  • ¼ teaspoon sea salt
  • 6 hard-boiled eggs, diced
  • 1 hard-boiled egg for garnish (sliced)
  • 2 tablespoons chopped fresh herbs (your favorite) for garnish


  • Be sure to let the eggs cool first
  • In a small bowl, whisk together the mayonnaise, olive oil, mustard, lemon juice, garlic, and salt
  • Mix in the eggs (Lightly mash the mixture if it's too chunky)
  • Spread the egg mixture on the baguette slices
  • Garnish with herbs and eg slices
  • Serve immediately
