Caprese Bruschetta with Balsamic Drizzle

Ingredients (Makes 6 pieces):

  • 1 baguette, sliced into ½-inch thick rounds
  • 2 tbsp Garlic Olive Oil
  • 1 cup cherry tomatoes, halved
  • 1 cup mini mozzarella balls (bocconcini), halved
  • 1 cup fresh arugula
  • 12 tbsp chopped fresh basil
  • Salt & pepper to taste
  • Traditional Balsamic, for drizzling

Instructions:

  • Toast the bread: Preheat oven to 375ºF. Brush each baguette slice lightly with Garlic Olive Oil. Toast on a baking sheet for 810 minutes, or until golden and crisp.
  • Top each toasted slice with a few arugula leaves, halved mozzarella balls, and cherry tomato halves. Sprinkle with chopped basil, salt, and pepper.
  •  Finish each piece with a generous drizzle of Traditional Balsamic and serve immediately.
