This is the main fat in EVOO. It helps lower bad cholesterol and keeps your oil fresher longer. High numbers = great quality.

Free Fatty Acids tell you how clean the oil is. Lower is better. Ours? Super low—because we crush our olives fast and fresh.

🧪 PPP & DAGs = Age Check

PPP goes up as the oil gets old. DAGs go down. Fresh oil = low PPP and high DAGs. Ours scores great on both.

👃 Organoleptic = Taste Tested

Before we bottle it, real people (trained tasters!) make sure every oil meets strict flavor standards. It’s not just science—it has to taste amazing too.
