Bright, fresh asparagus sautéed in Lemon Olive Oil, topped with toasted pine nuts and creamy feta for a simple yet gourmet side dish.
Ingredients
- 1 bunch fresh asparagus, trimmed & cut into 2-inch pieces

2 tbsp Lemon Olive Oil (from The Little Shop of Olive Oils)
- Salt & freshly ground black pepper, to taste
- 2 tbsp pine nuts
- 1/4 cup crumbled feta cheese
- Optional: a squeeze of fresh lemon juice or sprinkle of lemon zest
Directions
- Toast pine nuts in a dry skillet over medium heat, stirring often, for 2–3 minutes until golden. Remove and set aside.
- Heat Lemon Olive Oil in the same skillet over medium-high heat.
- Add asparagus and sauté 5–7 minutes, stirring occasionally, until tender-crisp and lightly browned.
- Season with salt and pepper.
- Transfer to a serving plate. Top with feta and toasted pine nuts.
- Finish with optional lemon juice or zest for extra brightness.
