Sautéed Asparagus with Feta & Pine Nuts

Ingredients:

  • 1 bunch fresh asparagus, trimmed and cut into 2-inch pieces
  • 2 tbsp Lemon Olive Oil (from The Little Shop of Olive Oils).
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp pine nuts
  • 1/4 cup crumbled feta cheese
  • Optional: a squeeze of fresh lemon juice or sprinkle of lemon zest

Instructions:

  • Toast the pine nuts in a dry skillet over medium heat for 2–3 minutes, stirring frequently until golden and fragrant. Remove and set aside.
  • Heat the Lemon Olive Oil in the same skillet over medium-high heat.
  • Add the asparagus and sauté for 5–7 minutes, stirring occasionally, until tender-crisp and lightly browned.
  • Season with salt and pepper to taste.
  • Remove from heat and transfer to a serving plate. Top with crumbled feta and the toasted pine nuts.
  • Finish with an optional squeeze of lemon juice or a sprinkle of zest for extra brightness.
