Ingredients

  • 1 bunch fresh asparagus, trimmed & cut into 2-inch pieces
  • 2 tbsp Lemon Olive Oil (from The Little Shop of Olive Oils)
  • Salt & freshly ground black pepper, to taste
  • 2 tbsp pine nuts
  • 1/4 cup crumbled feta cheese
  • Optional: a squeeze of fresh lemon juice or sprinkle of lemon zest

Directions

  1. Toast pine nuts in a dry skillet over medium heat, stirring often, for 2–3 minutes until golden. Remove and set aside.
  2. Heat Lemon Olive Oil in the same skillet over medium-high heat.
  3. Add asparagus and sauté 5–7 minutes, stirring occasionally, until tender-crisp and lightly browned.
  4. Season with salt and pepper.
  5. Transfer to a serving plate. Top with feta and toasted pine nuts.
  6. Finish with optional lemon juice or zest for extra brightness.
