This Mashed Cauliflower is creamy, savory, and easy to make with cauliflower, garlic, buttermilk, and Butter Premium Extra Virgin Olive Oil. It is a lighter alternative to mashed potatoes and makes a delicious side dish for weeknight dinners, holiday meals, roasts, chicken, steak, or pork.

 

Mashed Cauliflower

Ingredients

  • 1 medium head cauliflower, cut into florets
  • 4 cloves garlic, crushed

  • 1/3 cup 1% buttermilk, or light sour cream

  • Salt, to taste

  • Black pepper, to taste

  • 3/4 tablespoon Butter Premium Extra Virgin Olive Oil, or 1 tablespoon salted butter

Directions

  1. Steam or boil the cauliflower florets and crushed garlic until soft.
  2. Drain the cauliflower well.

  3. Add the cooked cauliflower and garlic to a bowl or blender with the buttermilk, Butter Premium Extra Virgin Olive Oil, salt, and black pepper.

  4. Purée with an immersion blender until smooth and creamy. A regular blender may also be used.

  5. Taste and adjust salt and pepper as needed.

  6. Serve warm.
