This Cilantro Lime Rice is a light and flavorful side dish made with Persian Lime Olive Oil, fresh lime juice, and chopped cilantro. It’s the perfect pairing for tacos, grilled meats, seafood, or bowls, with a fresh citrus finish and fluffy texture.
Ingredients

1 cup jasmine or basmati rice

1 ¾ cups water or low-sodium vegetable broth

1 tablespoon Persian Lime Olive Oil

½ teaspoon salt

1 tablespoon fresh lime juice

½ teaspoon lime zest

¼ cup fresh cilantro, chopped
Directions
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, bring the water or broth to a boil.
Add the rice, Persian Lime Olive Oil, and salt.
Stir, reduce heat to low, cover, and simmer for about 15 minutes, or until the liquid is absorbed.
Remove from heat and let the rice sit, covered, for 5 minutes.
Fluff the rice with a fork.
Stir in the lime juice, lime zest, and chopped cilantro.
Taste and adjust seasoning if needed.
Serve warm.
