Instructions:
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a large bowl, toss the sliced delicata squash with olive oil, Cinnamon Pear Dark Balsamic Vinegar, maple syrup (if using), cinnamon, salt, and pepper until well coated.
Spread the squash slices in a single layer on the prepared baking sheet.
Bake for 20-25 minutes, flipping halfway through, until the squash is tender and golden brown.
Transfer the roasted squash to a serving dish, and garnish with fresh thyme if desired. Serve warm and enjoy!
