  • 12 ounces rotini, fusilli, or your favorite short pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, chopped
  • 1/2 cup Kalamata olives, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/3 cup The Little Shop Tuscan Herb Olive Oil
  • 3 tablespoons The Little Shop Champagne Vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 1 clove garlic, minced
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried oregano
  • Optional: 1 cup grilled chicken, chickpeas, salami, or mozzarella pearls

Directions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package directions until al dente.
  2. Drain the pasta and rinse briefly under cool water to stop the cooking. Let it drain well.
  3. In a small bowl or jar, whisk together the Tuscan Herb Olive Oil, Champagne Vinegar, Dijon mustard, honey, garlic, kosher salt, black pepper, and dried oregano until well combined.
  4. In a large serving bowl, combine the cooked pasta, cherry tomatoes, cucumber, Kalamata olives, feta cheese, red onion, and parsley.
