Cucumber Shepherd’s Salad with Lemon & Oregano Vinaigrette

Ingredients (Serves 4):

  • 2 cups cucumbers, chopped (Persian or English preferred)
  • 2 ripe tomatoes, diced
  • ½ small red onion, finely sliced
  • 1 red bell pepper, diced
  • ½ cup fresh parsley, chopped
  • ½ cup feta cheese, cubed or crumbled
  • Salt & black pepper, to taste

For the Dressing:

Instructions:

  • In a large bowl, combine cucumbers, tomatoes, red onion, bell pepper, and parsley.
  • In a small bowl, whisk together Lemon Olive Oil, Oregano Balsamic, garlic, mustard (if using), and salt.
  • Pour the vinaigrette over the salad and toss gently to combine. Add feta and give it one final, light toss.
  • Let it sit for 1015 minutes before serving to allow flavors to meld. Great alongside grilled meats or on its own!
