Cucumber Shepherd’s Salad with Lemon & Oregano Vinaigrette
Ingredients (Serves 4):
- 2 cups cucumbers, chopped (Persian or English preferred)
- 2 ripe tomatoes, diced

½ small red onion, finely sliced
- 1 red bell pepper, diced

½ cup fresh parsley, chopped

½ cup feta cheese, cubed or crumbled
- Salt & black pepper, to taste
For the Dressing:
Instructions:
- In a large bowl, combine cucumbers, tomatoes, red onion, bell pepper, and parsley.
- In a small bowl, whisk together Lemon Olive Oil, Oregano Balsamic, garlic, mustard (if using), and salt.
- Pour the vinaigrette over the salad and toss gently to combine. Add feta and give it one final, light toss.
- Let it sit for 10–15 minutes before serving to allow flavors to meld. Great alongside grilled meats or on its own!
